* Self-reported adherence to either a typical American diet (not following a specific diet pattern) or 100% plant-based (vegan) diet
* Age 18-40
Exclusion Criteria
* Taking vasoactive medications
* Having overt cardiovascular, metabolic, or neurological disease
* Pregnant individuals
